Something Sweet to end the Weekend!-Cupcakes!

So I had picked up this cupcake recipe book some time ago and I made one of the recipes today! Yummy!! If you want something different then your usual yellow, choc or white cupcake I got a recipe for you..

Snicker Doodle Cupcakes with Brown sugar cream cheese frosting:

Preheat oven to 350

Ingredients for cupcakes:
1 1/2 cups all purpose flour
1 1/2 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon cinnamon
1 cup unsalted butter (room temp)
1 3/4 cups granulated sugar
4 large eggs (room temp)
2 teaspoons vanilla extract
1 1/4 cups milk

1. Preheat oven to 350

2. In mixing bowl sift together both flours, baking soda, salt and cinnamon

3. In large mixing bowl, with an electric mixer on Medium, cream butter and sugar until light and fluffy. Beat in eggs one at a time, beating until each is combined, scrap sides of bowl as necessary. Beat in Vanilla. Reduce speed. Add flour mixture in 3 batches, alternating with milk, beat until completely combined.

4. Divide batter  between lined muffin tins, fill about 3/4 full. Bake until toothpick inserted in centers come out clean.. About 20 minutes per recipe ( for me I baked with my convection mode it took about 25 minutes I may have filled a little fuller though too!) Remove from oven and transfer them to wire racks to cool.

Now on to the frosting!

You will need 1/2 cup unsalted softened butter
8 oz of cream cheese room temp
1 cup light brown sugar

In a medium bowl use electric mixer on medium speed beat all ingredients till creamy and smooth. Use immediately or refrigerate in airtight container for up to 3 days. If you did not use immediately bring to room temp and beat on low till smooth and creamy.
